Istanbul is the rare city where the historic core, the food scene, and the contemporary art neighborhoods are all worth equal time. Most travelers spend two days in Sultanahmet (the Hagia Sophia, the Blue Mosque, the Cisterns, the Grand Bazaar) and then complain that Istanbul is touristy. The fix is to leave Sultanahmet after lunch and not come back.

The places below lean toward Karaköy, Cihangir, and Kadıköy (on the Asian side, twenty minutes by ferry, where most actual Istanbul residents live). The Turkish breakfast is its own attraction — book at least one weekend brunch with three hours blocked out. The street food is excellent and inexpensive: simit, midye dolma, balık ekmek, kebab in every form. The bazaars are best in the morning before the cruise crowds.

Four to six days is the right amount. Take the ferries — they cost less than a coffee and they are the city's transit system, not a tourist activity. Stay in Beyoğlu (Galata, Karaköy, or Cihangir) rather than Sultanahmet so you can walk home from dinner. Bring comfortable shoes; the hills are real.
